Healthy Italian Wedding Soup Recipe

In the Source we have a great set of  recipe books called “Saving Dinner”. They are full of healthy menus, recipes and shopping lists!

I tried this recipe last week from “Saving Dinner: the Low-Carb Way” and my family loved it!

Ingredients:

1/2 lb Italian sausage, casing removed

1 small onion, diced

2 cloves garlic, pressed

2 cups kale, chopped

1  14 1/2-ounce can chicken broth

2 zucchini, chopped

1/2 teaspoon oregno

1/2 teaspoon marjoram

1/2 teaspoon salt

Dash crushed red pepper flakes to taste

 

Directions:

In a large sauce pan brown sausage over medium-high heat. Stir in onion and garlic; cook and stir until soft, about 2 minutes. Now add the kale and cook another 3 minutes. Stir in remaining ingredients; bring to a boil, lower heat and simmer for about 8 to 10 minutes. Soup should be quite thick.

This soup is great with a big green salad! You can also sprinkle Romano cheese on top.
