Chicken Tacos

I wanted to share one of my new favorite healthy recipes for Chicken Tacos that is SO easy and healthy!  Here is the recipe and a couple variations for serving.  Hope you enjoy!

Ingredients:

2-3 frozen chicken breasts
1 can corn (drained)
1 can black beans (drained)
1 can of Rotel (diced tomatoes with green chiles) or one small jar of salsa (if using rotel, drain half the water)
1 packet of taco seasoning

Directions:

In the morning, place all the ingredients into your crockpot.  Cook on low for 8-10 hours (6-8 if you have a great crockpot).  In the afternoon, take 2 forks and shred your chicken.  Stir and continue to let cook until time to serve.

For Tacos:

Serve on wheat tortillas and add your favorite toppings (shredded cheese, lettuce, tomato, sour cream, onion)

For Taco Salad:

Serve on shredded lettuce and top with lettuce, tomato, and shredded cheese.
